Jamaican Chicken & Potatoes

Last night, in keeping with our menu plan for this week, we had Jamaican Chicken and Potatoes, and I said I would share the recipe.  So, here you are!

Ingredients:
Chicken:  Traditionally, in Jamaica, they just quarter whole chickens with huge butcher knives, bones and all.  I don't have the stomach to do that, so I use a package of drumsticks and a package of chicken breast.

Potatoes:  I use halved or quartered (depending on size) red potatoes.

Spice Mix (make this first)
1 T instant minced onion
2 t dried thyme
1 t ground allspice
1 t ground pepper
1/2 t salt
1/2 t ground cinnamon
1/4 t cayenne pepper

Put all ingredients in a small container with a tight lid.  Put the lid on, and shake to combine.  I don't usually use the entire mix when I make this dish, and often will make a double or even triple batch so that it's ready to go next time I want to make it!  


Spray a 9x13 pan, and line with the halved and quarter potatoes.



Next, spray the potatoes lightly with olive oil.  
Side note:  After a reader suggested the *Misto, I got one for my birthday, and have loved it!  You just put regular olive oil in the *Misto, and spray away, refilling when necessary.  I use it in place of Pam (so I can avoid soy oils), and not only is it much cheaper than buying Pam, but 1/2 a cup of olive oil has lasted me several months at this point!

 Add the chicken, spray lightly, and sprinkle with seasoning.


Bake, uncovered, at 375 for about 50 minutes, or until chicken reaches 180 and potatoes are tender.
